Prince of Wales Cake 1 cup sugar (brown) 1 cup butter 4 large eggs 1/2 cup molasses, fancy 1 teaspoon ginger 1 teaspoon cinnamon 1/2 teaspoon nutmeg; freshly grated 2 cups flour, white 1 teaspoon baking powder 1 teaspoon baking soda 1/2 teaspoon salt 1 cup coffee (cold); strong Grease and flour either a bundt pan or a 9x12" cake pan. Preheat oven to 350°F. Cream the sugar and butter together and beat the eggs in, one at a time. Beat the mixture thoroughly until light and fluffy. Add the molasses to the creamed mixture. Sift the spices, flour, baking soda, baking powder and salt together. Fold the dry ingredients alternately with the coffee into the creamed mixture. Pour into the prepared tin. Bake at 350°F for 40 to 45 minutes for the cake tins, approx. 50 minutes for the bundt pan. Serve warm with whipped cream or butter or cold with butter frosting and Lemon Butter filling.
